Soft Serve Ice Cream Machine

The soft serve ice cream machine is a staple in many ice cream shops, frozen yogurt stores, and even fairs and carnivals. It’s a commercial kitchen appliance used to make soft serve ice cream and other frozen treats like frozen yogurt. 

The machine consists of a hopper for holding the mix, a freezing cylinder for churning the mix and a dispenser for serving the final product. The mix is made of milk, cream, sugar and flavorings, and churned in the freezing cylinder until it reaches a creamy consistency.

Other parts of the soft serve machine include the main housing or chassis, freezer unit – where the soft serve mix is stored, mixing pump, mixing chamber, dispensing nozzle, and the control panel.

So, how exactly does it work? The key is to freeze the mix while simultaneously churning it. This process, called “overrun,” is what gives soft serve its signature texture. The machine has two cylinders, one for freezing the mix and another for storing the final product. The freezing cylinder is kept at a temperature of around -30°C (-22°F) while the storage cylinder is kept at a warmer temperature to keep the final product soft and scoopable.

The operator pours the ice cream mix into the freezing cylinder, and the machine starts churning it using a small, high-speed agitator powered by an electric motor. The agitator creates a whirlpool effect, evenly distributing the ingredients and incorporating air into the mix. As the mix churns, it begins to freeze and thicken, with the agitator breaking up any ice crystals that form, resulting in a smooth and creamy texture. The faster the agitator moves, the more air is incorporated into the mixture, making the final product softer.

Once the desired consistency is reached, the mix is dispensed into a cone or cup. Some machines have a “soft serve” spout for creating unique shapes, like twisted soft serve or topped with sprinkles.

That’s it! Soft serve ice cream machines are designed to be easy to use and maintain, capable of producing an endless supply of frozen treats in a variety of flavors.
