Heat the Nappage in the microwave to 40 – 50° C. Pour onto the sweet chilled to –20°C (remove any frost
from the sweet with a spatula) and spread from the centre outwards to cover the sweet. Chill again to –20°C for at least 5 minutes,
then defrost in the fridge at 4°C for a few hours before serving
